Yesterday I got to go on a tour of Theo Chocolate and saw “the only roaster of organic cocoa beans and the first roaster of Fair Trade certified cocoa beans in the United States.”

I forget what this roaster/bin/thing did, but the tour was great anyway since they stuff you full of chocolate the entire time.
